Appetite for Reduction: Everyday Chickpea Salad

I made quite a few changes to this salad. I used bulgur instead of quinoa, spring onions instead of red, arugula and spinach instead of romaine and even sunflower seeds for the cashews in the dressing. As said in the description for the recipe, it's foreverly customizable, and the dressing is simple yet really tasty. I wasn't sure how the sunflower seeds would do in it, but it came out really creamy, so I'm pleased. I'm sure I will make loads of different versions of this salad in the future, and so should you.
